Cheese Potato Casserole
5 cans sliced potatoes, drained
1 cup cream of chicken soup
1 pint (16 oz.) sour cream
8 oz. shredded Colby or cheddar cheese
1 small to med. onion, chopped, (optional) 
4 tablespoons, (1/4 cup) melted butter or margarine

Put drained potatoes in 13 X 9 inch pan, sprayed with Pam.   Mix next  3, (4 if you use the onion), ingredients in bowl and then pour over potatoes and mix together.  Pour melted butter over mixture.  Bake uncovered at 350 degrees for 1 hour.  I make this casserole without the onion.  It is quick and easy and no one can tell that they are canned potatoes.  It can be mixed ahead and baked later.
