Banana Bread
Makes 3 -- 4x9 inch bread pans
This recipe freezes well & is wonderful with either butter or whip topping for a dessert.
It's really easy.
  • 1 tsp salt
  • 2 cups sugar
  • 2 eggs
  • 1/2 cup shortening
  • 1 tsp almond extract
  • 6 large bananas
  • 2 tsp baking soda in 1/2 cup hot water
  • 4 cups flour
  • 1/2 cup chopped walnuts, English or Black (optional)
  • 1 cup raisens (optional)
  • -->Beat eggs and add sugar and shortening

  • Mixed mashed bananas with baking soda/hot water mixture
    Add this to first mixture
    Next add sifted flour & salt
    Last add almond extract
    if you choose to include either walnuts or raisens, or both, add them at the very end
    Pour mixture in 3 greased 4x9 bread pans (or you can use the smaller aluminum loaf pans)
    (I use spray coating for the pans, but you can use the traditional shortening and flour, if you like)
    Bake at 300f for 1 hour or until done (smaller pans will not take this long)
    Insert a knife into the bread, if it comes out clean, it is done.
    If there seems to be wet mixture on it, bake for another 5--10 minutes.
    Check it again. Keep checking til the knife comes out of the bread clean.
    Remove from oven and let stand for approximately 10 minutes.
    Turn bread pans up-side-down and let the bread cool on a paper towel.
