Marian's Tomato Casserole
I generally make 3-4 recipes in bread-loaf pans and freeze all
but one. If
To use fresh tomatoes, simply boil them, skin them, and
use the equivalent of a large can of Hunt's whole tomatoes. People
detest tomatoes will ask for seconds - and the recipe.
|One large can Hunts whole tomatoes
4 rounded tablespoons flour
1/4 cup sugar or equivalent of substitute
1/4 lb coarsely shredded cheese (I prefer sharp)
1 cup buttered cracker crumbs
4 tablespoons butter
2 large onions, chopped
Saute onions in butter. Add flour, mixing well. Drain
juice from tomatoes
into flour-onion mix. Cook to thicken. Add broken up
tomatoes and sugar.
Add salt and pepper to taste. Cook until thick. Pour
1/2 of mixture into
casserole. Sprinkle cheese on top, then add rest of tomato
mix. Top with
buttered cracker crumbs. Bake at 350 degrees until hot
and bubbly and
crumbs are browned. Probably would serve 6, but for us,
we're lucky if it
makes 3 servings.
you are going to freeze it, do not put the cracker crumbs on top until
thaw and heat. This can be served either hot or cold, and it is excellent
when served with rice.
